OS 1311: Fun In The Field

Stuffed Chicken Thighs
 
4-6 Chix Thighs
Heavy Cream
Butter
Brie Cheese
Mozzarella Cheese
Mayo
Dijon mustard
Garlic
Onions
Olive Oil
Mushrooms
Chix broth
Fresh Parsley
 
Debone the chicken thighs leaving the skin on . Mix one 1/2 cup of mayo with 2 tbs of Dijon mustard. Brush this dijonaise on the inside of the thigh with the skin side down. Slice a piece of brie cheese and lay it on the thigh then roll this up. Sauté the thighs in Olive oil and butter carefully just to brown them . Remove from oil/ butter and add diced garlic and onions and saute till done. Add mushrooms and after they are cooked add 1 cup of heavy cream and 1/2 cup of broth. Add chix back in to the skillet and bake at 325 for 20 minutes. Remove and add shredded mozzarella on top going back in the oven for 10 minutes. Add chopped parsley. Remove and enjoy!
