OS 1225: 3 Tricks and a Big Trip

With Capt. Kirk a bit under the weather, it was up to Capt. Kevin and Jeff to man the ship…but they had a couple tricks up their sleeves:

Trick #1: Capt. Brian LeSage and Kevin Pickett came in to talk about fishing and an amazing hunting trip to Argentina…that had A LOT of surprises. There were also several callers who weighed in with their own perspective on a trip south of the equator.

Trick #2: Capt. Kevin took us down memory lane with a great story about catching the ultimate tarpon with Mark Sosin, who passed away this week. RIP, Mark!

Trick #3: They even tapped on Producer “Snake Killer” Chris for his latest moccasin encounter…notch #8 on his snake belt!

Here’s your Kirbyco Builders Inc. cooking tip of the week: Smoked Bourbon Bacon wings from Captain Brad Smith

• Season 2 lbs of wings with your favorite smoke seasoning and add in corn starch to help crisp up

the skin

• Smoke the wings to internal temp of 180.

• Make your Bourbon bacon sauce

Slice up 1/4lb of bacon, cook until it starts to crisp up then remove bacon and leave 1 tbsp bacon fat and sauté 1/2 onion and 3 cloves of garlic for about 5 mins. Add bacon back in, 1/4 cup apple cider vinegar, 1/4 cup maple syrup, 1/4 cup brown sugar,

2oz bourbon and cook for 5 mins until it thickens

• Put the wings in a bowl, add in bourbon bacon sauce. mix it up good. Enjoy!!
