OS 1178: August Is Upon Us

With August approaching, the guys started talking about getting ready for deer season.  Yeah, it’s time to start planning…but there may be a little bit of dreaming about what lies beyond the misery of what is traditionally the hottest, nastiest, stormiest month of the year.  Anyway, there was a lot of fishing talk, too, as you would expect.  And food and music (RIP to ZZ Top’s Dusty Hill).

Here’s your Kirbyco Builders Inc. cooking tip of the week from Chef Gordon: Linguini & Clams
Get water boiling for pasta, linguine or spaghetti. Cook 3/4 done. Little olive oil in the pan, couple of spoons of minced garlic. Sauteed on med/low heat for a few minutes. Don’t put garlic in hot pan. Pour in some dry white wine. Sauvignon Blanc is best. Throw clams in. Turn heat on high. Cover and steam till clams open. 3 minutes or so. Drain pasta, save a cup of water. Add chopped parsley. Throw pasta in with 2-3 Tbsp of butter and cover stirring frequently. The whole deal takes about 20 minutes. If you cook the clams whole be sure to purge them or it will be gritty from the sand.
