OS 1295: We Ain’t Skeered Of This Time Of Year

Forget all the goofy Halloween jokes…whether it’s fishing or hunting, things have been good for all of us on the First Coast.  The guys shared all kinds of things from the woods and the water, and Jeff shared the name of his truck (yes, he named his truck).

    First make this…
     
    Smoked Fish DIP
     
    Smoke approximately 1-2lbs of fresh fish using Hickory or Apple chips
    Refrigerate the smoked fish overnight. Following day shred the fish and crumble in a large bowl.
    Add 1 cup mayo
    1/2 cup sour cream
    1 tbs Westershire sauce
    1 Vidalia onion diced
    Teaspoon of Old Bay
    1/4 tbs of salt
    1 tsp lemon juice
    3 tbs tiger sauce or more if desired
    Serve with captain wafers or crackers
     
    Blend ingredients well n chill.
     
    Fish Cake:
    To the above recipe add 1 egg to make enough for 2-3 cakes, roll in panko and sauté on low heat with butter or sesame oil till brown. Serve with tartar sauce
