Here is your KirbyCo Builders, Inc cooking tip of the week from Captain Kirk: Fish Cakes!First make this…Smoked Fish DIPSmoke approximately 1-2lbs of fresh fish using Hickory or Apple chipsRefrigerate the smoked fish overnight. Following day shred the fish and crumble in a large bowl.Add 1 cup mayo1/2 cup sour cream1 tbs Westershire sauce1 Vidalia onion dicedTeaspoon of Old Bay1/4 tbs of salt1 tsp lemon juice3 tbs tiger sauce or more if desiredServe with captain wafers or crackersBlend ingredients well n chill.Fish Cake:To the above recipe add 1 egg to make enough for 2-3 cakes, roll in panko and sauté on low heat with butter or sesame oil till brown. Serve with tartar sauce
