OS 1175: Where Did Everybody Go?

So, here’s what happened…Capt. Kevin was out fishing the Ancient City.  Jeff was smack dab in the middle of family vacation (and doing a whole lot of OSR).  Capt. Kirk was feeling a bit under the weather (praying for you, buddy!).  So it was up to Moe’s Southwest Grill Fishing Forecast host Capt. Scott Shank and Producer Chris to bring the show home and talk about all the silliness happening – from Elsa to snapper season to all the tournaments going on.  Thankfully,  Jeff and Capt. Kevin checked in, Shimano’s Brian Dufek stopped by to spend some time in-studio, and the OS faithful chimed in to sort things out and have some fun.

Here’s your Kirbyco Builders Inc. cooking tip of the week: Kingfish Nuggets
  • 2 lbs kingfish nuggets
  • Buttermilk
  • Peanut oil
  • Corn dust or Wonder Flour
  • Garlic Powder
Preparation:
After steaking a kingfish in 1 inch steaks remove approx 2 lbs of nuggets by cutting the 4 quadrants out of the steaks with a pairing knife. They look like small circles. Soak the nuggets in Buttermilk for approx 4 hours or overnight. Mix approx one cup of dust or flour with a tablespoon of garlic powder
Drain the fish after marinating and toss in the Corn Dust or Wonder Flour lightly breading the nuggets.
With the oil heated fry the nuggets until brown on one side and turn them to continue to brown the other. Place on a pastry screen to drain. Enjoy with your favorite tartar or cocktail sauce!
