With Jeff out doing some OSR, Capt. Kevin and Capt. Kirk invited Capt. Ricky “Hollywood” Poupore to take the trip downtown to Metro Park for the Jax Boat Show! Beautiful boats at a beautiful location…you can’t beat it!
Of course there was a bunch of fishing talk, lots of great gear tips, and even a tasty technique or two popped up in conversation.

Smoke approximately 1-2lbs of fresh fish usingHickory or Apple chipsRefrigerate the smoked fish overnight. Following day shred the fish and crumble in a large bowl.Add 1 cup mayo1/2 cup sour cream1 tbs Westershire sauce1 Vidalia onion dicedTeaspoon of Old Bay1/4 tbs of salt1 tsp lemon juice3 tbs tiger sauce or more if desiredServe with captain wafers or crackers. Blend ingredients well n chill.Fish Cake:To the above recipe add 1 egg to enough for 2-3 cakes, roll in panko and sauté on low heat with butter or sesame oil till brown. Serve with tartar sauce.
